Pork Belly Cracklings

Ingredients:
- 3 pounds of pork belly
- 2 cups of water
- 4 tbsp of Cajun seasoning
Kitchen Equipment:
- cast-iron pot
Directions:
- Keep the pork belly in the refrigerator for 40 minutes.
- Cut the pork into cubes of three-fourth inch.Fill a cast-iron pot with one-fourth portion of water.
- Add one tsp. of Cajun seasoning.
- Boil the water.
- Add the cubes of pork belly.
- Cook for twenty minutes.
- Cover the pot once fat begins to pop and sizzle.
- Cook for fifteen minutes.
- Drain the pork cracklings.
- Sprinkle remaining seasoning from the top.
- Serve immediately.
