Loaded Cauliflower Rice

Ingredients:

  • 1 head of cauliflower
  • 1 cup of cheddar cheese
  • 1 lb. of bacon
  • ½ cup of chives
  • A dash of salt

Kitchen Equipment:

  • grilling pan

Directions:

  1. Rice your cauliflower.
  2. Heat the grilling pan over a moderate temperature and cook the bacon for four or five minutes on either side.
  3. Place your cauliflower rice into a microwave-safe bowl and sprinkle your shredded cheese over the top. When this is set, go ahead and pop the bowl into the microwave for a minute and allow for the rice to cook through and the cheese to melt.
  4. Topped the dish off with your bacon pieces and season to your liking.
